Prime Rib

Prime rib claims center stage during holiday season for a very good reason. It is the king of beef cuts.

It’s called a standing rib roast because to cook it, you position the roast majestically on its rib bones in the roasting pan.

Lmao! I sae the thread title, opened it just to make some lsme comment about you and prime rib (which I dont know what it was gonna be). But i assumed you to be a fan, and seeing you with the first comment confirms it.

Prime Rib is great if done right. Bad prime rib (overcooked, not warm, etc) blows.

Am I crazy, or does leftovers suck?

We're doing the exact thing with tamales on Christmas eve and prime rib on Christmas day.  The only difference is that I'm smoking ours with a butter, thyme, rosemary, garlic coating.  I can't wait.

Leftover prime rib makes awesome sandwiches. Cut it wafer thin then dip it in leftover heated broth to warm it up. Drop it on some soft french bread or sourdough with provolon and coarse brown mustard.
