Another week has snuck up on us! Can you believe we’re so close to the New Year? I, for one, have had one of the most eventful years in recent memory. With my husband coming off the heels of yet another military deployment (the second in three years), I can honestly say I’m ready for a bit of zen.

Single-parenting and being responsible for keeping us all fed and happy is no joke. One needs a reprieve from the daily demands life puts on us.

the pumpkin chili recipe looks interesting. trying to talk wife into making it this week with a few adjustments that YK doesn't want me to mention. is it possible to buy a single 12 oz. bottle of beer? maybe at 7-11?

we made this chili this afternoon. wife used gardein brand soy meat and we substituted acorn squash for pumpkin. it tastes pretty good although there's a bit of a beer aftertaste.

we'll see how well it reheats tomorrow for lunch.

Maybe if you started with just the beer and a few spices and cook the alcohol out then put in the rest of the ingredients it may work.

we followed the directions on that part but maybe your suggestion is worth a shot. 

in the meantime, we have five cans of pumpkin beer from trader joes sitting in our pantry...
