Make sure to hit the Ommegang Brewery. Best brewery tour I have been on. http://www.ommegang.com/

Adam is right about the drive in. You should be hitting it towards the end of the foliage season, but it should still be spectacular. If you are coming from NYC, there is no direct route, so take the scenic route through the Catskills on either Route 28 or Route 23. (28 is better IMHO).

We stayed in the August Lodge just outside of town. Good place, but not walkable to anything. Owner was a douche waffle. Very anal about everything. I think he was beat down by too many youth baseball teams staying there. He had signs on EVERYTHING. http://www.augustlodge.com/

If you don't mind a little drive, the Roxbury might be the coolest place I have ever stayed. It's about an hour drive, but the drive is beautiful and very scenic. http://www.theroxburymotel.com/

I was just there in August with my boys since my oldest boy played in a tournament out there.  I thought the hall was amazing.  Some of the best things were in very unremarkable displays, so take your time and read everything (like a ball from the first game where admission was ever charged was literally inserted behind plexiglass in a wall dividing two hall with a small placard).  Being with a team of 12 year olds, I felt rushed and wished I had more time.  The town itself is really cool too, and be sure to stop by Doubleday field and watch broken down old dudes living the dream.  Cool atmosphere there.

The amount of shops and memorabilia in Cooperstown could drive you to the poorhouse, so leave the plastic in the hotel!
