I like to roast sweet potato and Brussels sprouts but no way I chop the potato that small. And that just seems like a tragic waste of perfectly good pork chops

The size of the vegetable chop is all about cooking time. Sheet pan everything together and it all has to reach the done point at the same time. Both potatoes and brussel sprouts take longer to cook than a store cut pork chop unless you cut them small.

I get that. I'd rather vary the times in the oven than chop that small
