BBQ Bacon Jalapeño Poppers

This post is brought to you in partnership with Stubb’s Bar-B-Que 

As we all know, bacon makes everything better. You know what, though? So does barbecue sauce!

These spicy grilled jalapeño poppers are stuffed with an addictive mix of Stubb’s Sticky Sweet Bar-B-Q Sauce, cheddar and cream cheese, and glazed bacon before being grilled until hot and bubbly.

I've stuffed them with my homemade salsa & spanish rice instead of cream cheese before. Really liked it.

I've had that happen many times. I like spicy, but when you're expending mild to medium and get a hot one it catches you off guard.

i've only had them with cream cheese, and they can be very good. i like the idea of monterey jack and salsa.

Can you share that recipe?  I make salsa, and I have tried different recipes, but I haven't found THE one yet.

Here you go, @maximus p

10 Roma Tomatoes

2-3 Jalapenos (hot)

1-2 Habaneros (hot)

1-2 Anaheim Chilies (mild)

1-2 Serrano Chilies (medium to hot)

1 Large White Onion

1 Bundle of Cilantro (make sure it's fresh)

1 Bundle of Green Onions (you can use 4-5  onions)

2-4 Large Garlic Gloves

1 Lime

Boil the tomatoes. Rinse off with cold water, then peel the skin.

Chop up each roma tomato into 4's, chop onion down to blend, cut off stems from cilantro, cut up ends of green onions, cut off the tops of each pepper.

Throw all of it into a blender (a little of each). Dump into a large bowl until all of the contents are blended. Add pepper & salt (a tablespoon of each).

Cut the lime in half and squirt both sides into your bowl and stir.

Chill in the freezer for 1 hour to thicken up and cool down.

Serve with Juanita's chips or homemade corn tortilla chips.
