Recipe of the Day: Pressure Cooker Potato Salad

Elise’s Dad makes an awesome potato salad. The salad is studded with lots of crunchy chopped vegetables, and the simple dressing (just mayo, mustard, and pepper) is perfect. As far as the ingredients go, there isn’t a whole lot to improve upon!

The classic stove-top method works just fine, of course, but I couldn’t wait to convert this classic recipe to be made in the pressure cooker!

I think I am going to save water elsewhere in my life, and go ahead and boil the potatoes.

Not sure I've had carrot in my potato salad before.  Otherwise, I like the solid list of ingredients.

Used the instapot for potatoes before...it doesn't take 5 minutes...it takes 35...15 for instapot to get to right pressure level and 20 minutes to cook.

In N Out fries are soft enough to use in potatoe salad

laugh...good point...if you don't eat an in-n-out in the first 2 minutes it becomes inedible

agree with you on this. haven't had red bell pepper in mine before, either, and not really sure i want that.
