I really like the extra sharp aged white cheddar. Tillamook makes a good one.

smoked swiss, though it's very tough to find - it rocks on sandwiches

goat cheese

mozarella, especially if it's melty in something

 

not much of a cheddar fan, though i'm a big fan of the sharp cheddar they serve at anderson's pea soup. i usually buy a container of that and some wheat thins, and it makes for a nice snack.

I will be happy when the restaurant industry tires of trying to find a way to **** up another salad, steak or hamburger by mixing in Blue Cheese.

There's a French Feta that we picked up at specialty cheese shop that was flippin' amazing. Nothing like the crap you get at the store.

There is an awesome goat farm in Pescadero along the coast that makes some of the best cheese I've ever had.

You an eat the goat cheese mozzarella like an apple, it's ridiculous good.

Cheese whiz for everything else.

If you're going to make a Greek salad you have to go with a really good feta.  We have a local Arabic store that carries the French feta and it is really good.
